How to Make a Blue Lagoon Mocktail

  1. Chill the glass. Fill a tall glass to the top with ice. A cold glass keeps the drink fizzy for longer.
  2. Add the syrup and lemon. Pour in 30 ml of Blue Curacao Syrup and 15 ml of lemon juice.
  3. Top with soda. Pour the chilled soda slowly down the side of the glass so it doesn't foam over.
  4. Stir once. Give it one gentle stir from the bottom so the colour spreads evenly.
  5. Garnish and serve. Add a lemon wheel on the rim and a sprig of mint, and serve straight away.
Café tip: For the classic layered look, add the soda and lemon first, then pour the syrup slowly over the back of a spoon. It sinks to the bottom and creates a blue-to-clear gradient. Stir just before drinking.
